Nutritious and healthy baobab pancake recipe.

Ingredients
- 125 g gluten free or regular flour
- 240 ml almond milk
- 1 tablespoon ground flaxseed
- 1 tablespoon baking powder
- 1 tablespoon maple syrup
- 1 tablespoon coconut oil
- 1 tablespoon baobab powder
- 1 teaspoon vanilla extract
- 1 pinch salt optional
- 4 tablespoons plain plant-based yoghurt
- 1 tablespoon maple syrup
- 1 tablespoon baobab powder
- 1/2 teaspoon vanilla extract
Pancake Mix

Directions
- Mix dry ingredients.
- Mix wet ingredients, including the melted coconut oil.
- Stir the wet and the dry ingredients together.
- Leave for 5-10 minutes to allow the flaxseeds to soak up the liquid.
- Give the mixture a quick stir and place a spoonful in hot pan.
- When the top bubbles, after around 2-3 minutes, flip and cook for a further 2 minutes.
- Mix dry ingredients.
- Mix wet ingredients, including the melted coconut oil.
